I’ve been making some of the easiest cookies ever using just a few simple ingredients. Because… that is just how I roll. I don’t have the time, patience or the cooking skills to make elaborate recipes with a zillion ingredients. Although, I really wish I did! But, I’ve found go-to ways to work around what I’m lacking in the kitchen. And, so far my Hubs and son haven’t noticed yet, which totally works! They actually think I’m pretty talented in the kitchen, I think that I’m just resourceful. That, is something I can take credit for!
So this super easy way to make cookies works for me. I basically use peanut butter, egg and sugar as the base. Then you can add something a little bulkier like chocolate chips if you like to balance the cookies nicely. Although they do taste great as is, they are just bake up a little thin. So, since I’ve exhausted the basic recipe, I wanted to switch it up a bit to keep things interesting and tasty. So, this time around I decided to take my basic recipe and add store bought trail mix to them since my hubby is a big fan. He was quite pleased with the outcome. I have to say they were pretty yummy myself. Not a complaint in the house and they were eaten up before I could type this recipe up to share!
On a total separate note, don’t ever try to bake Biscoff Spread. It’s not good. not. one. bit! I can’t believe I wasted a $6 bottle of the stuff experimenting with it as a replacement for PB. No wonder I haven’t seen any recipes using the stuff- duh! I totally LOVE it as is though- soooo yummy if you haven’t tried it yet. Tastes awesome on top of graham crackers IMO.

- 1 Cup Creamy Peanut Butter
- 1/2 Cup Granulated Sugar
- 2 Large Eggs
- 1 Cup of Trail Mix (Your Choice)
- Preheat oven to 350
- Combine peanut butter, sugar and eggs until fully blended. Gently mix in the trail mix.
- Drop heaping tablespoons of cookie dough onto a non stick baking sheet.
- Bake for 10-12 minutes.
- Makes about 16 cookies.
