Care to guess what my favorite cookie is of all time? You got it! The Girl Scout Samoa cookies, pure deliciousness all packed into a portable treat. We recently had some fried ice cream at a local Mexican restaurant and we just loved it. But, of course when I’m indulging in sweets… I’d rather not fry them too! I figured, why not just add a crunchy coating to it and serve as is.
I had whipped up a batch of not-fried ice cream balls recently and they were so fun and good. I was trying to think of different flavors that I could use and happily I thought of the Samoas. They came out very very yummy! So, if you are a fan, you might want to give these a try. They are mighty easy and even great for serving guests.
- 4 Scoops of Vanilla Ice Cream
- 1/3 Cup of Sweetened Toasted Coconut
- 6 Lorna Doone Shortbread Cookies
- Chocolate Syrup
- Caramel Syrup
- Crush the cookies and mix with the toasted coconut. You can mash it with a cup or put it in a plastic bag and crush that way. Set it in a shallow bowl nearby. Scoop out an even ball of ice cream, with your hands very quickly form into a round ball and roll into the cookie mixture until fully coated. Repeat 4 times.Drizzle each ice cream with a little chocolate and or caramel syrup. Serve and enjoy!
